Yields 12 muffins

1 1/2 cups flour (plus 2 tbsp)
1 1/2 tsp baking powder
pinch of salt
1/2 cup vegan butter
1 tbsp ground flaxseed
2 tbsp water
1 tsp vanilla extract
1 cup small diced apples
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup soy milk

  1. Preheat oven to 350f. and place 12 liners in a muffin pan.
  2. Combine dry ingredients in bowl and set aside.
  3. Mix the diced apple with the cinnamon and nutmeg and the 2 tbsp of flour, and set aside.
  4. Cream butter and sugar with an electric mixer until fluffy, add in the vanilla, and then add in the flax "egg" and mix until combined.
  5. Alternate adding the dry ingredients and the soy milk into the mixer. Be careful not to overmix the batter.
  6. Fold in the apple mixture by hand.
  7. Divide the batter into the muffin pan and bake for approximately 24 minutes.

For the sugar topping melt some vegan butter and brush over cooled muffins. Combine white sugar and cinnamon, and then press the tops of the muffins into the sugar mixture.
