Mini desserts are always so cute and these mini banana breads are no exception! They are perfectly moist and just sweet enough to be the perfect late afternoon snack to pair with your cup of tea!


Yields 6-8 mini loaves

2 bananas (roughly 1 1/4 cups)
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
Pinch of salt
1/2 cup sugar
2 eggs
1 tsp vanilla extract
1 3/4 cups flour

  1. Preheat the oven to 350F.
  2. Combine the bananas with the melted butter in a big bowl.
  3. Add the baking powder, baking soda and salt and combine.
  4. Add the sugar, eggs and vanilla and mix well.
  5. Incorporate the flour in small amounts and mix well.
  6. Prepare your mini loaves pan with a light coat of butter and flour. Pour the batter equally in your pan.
  7. Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean.
