These chocolate donuts are my new favorite recipe! They are so rich and moist and just delicious with a candy cane glaze! You could make the same donuts with any glaze/toppings that you like!

Yields 12 donuts

Donut batter
1 3/4 cups flour
1 tsp baking powder
3/4 cup cocoa
Pinch of salt
1/2 cup sugar
1/2 cup canola oil
1 1/4 cup soy milk
1 tsp vanilla extract
2 eggs
Glaze
2 tbsp soy milk
1 1/2 cup powdered sugar
1/2 tsp peppermint extract

1. Preheat the oven to 350F.
2. In a big bowl, combine the flour, baking powder, cocoa powder, salt and sugar.
3. Incorporate gradually the canola oil, soy milk and vanilla while mixing with a electric mixer.
4. While mixing, incorporate the eggs one at a time.
5. Coat your donut pan with butter and flour.
6. Pour the batter in the donut pan using a cup, filling them 2/3-3/4 of the way full. Be careful to not overfill as it rises a lot.
7. Bake for 10-12 minutes or until a toothpick inserted in the donut comes out clean. Let cool down on a wire rack.
8. Combine all the ingredients for the glaze in a small bowl. Set aside.
9. Once the donuts are completely cooled down, dip on side of the donut in the glaze.
10. Decorate with crushed candy canes
