One of my favorite pastry is the almond croissant and it was my inspiration for these almond brioche buns! They turned out as delicious as I thought they would be, it will surely please everyone!


Yields 10-12 buns

Brioche
1 cup warm milk
1 pack active dry yeast
1/4 cup sugar
Pinch of salt
1/3 cup softened butter
1 tsp vanilla extract
1 egg
3 cups flour
Almond paste
1 1/2 cups almond flour
1/4 cup brown sugar
Pinch of salt
1 tsp almond extract
1/4 cup butter
1 egg white
Icing
2 cups powdered sugar
1 tsp vanilla
4 tbsp milk

1/2 cup maple syrup
1/2 cup sliced almonds

1. To make the brioche dough, combine the warm milk and the yeast together and let sit for 5 minutes. Set aside.
2. In a big bowl, combine the sugar, salt, butter, vanilla and egg and mix with an electric mixer until everything is well incorporated.
3. Incorporate the flour alternating with the milk mixture and combine with an electric mixer on low speed.
4. Transfer the dough to a lightly greased mixing bowl and cover with plastic wrap or towel. Let rise for 1 hour or so.
5. To make the almond paste, combine all the ingredients in a bowl and combine well with a wooden spoon or a fork. Set aside. 6. Roll the dough out in a rectangle shape on a floured surface. Spread the almond paste on the dough and sprinkle the almond slices on the paste.
7. Pour the maple syrup in your baking dish(7"x12"). Gently roll the dough into a long cylinder. Cut the roll in 1 1/2 inch long pieces and place them in the baking dish. Let rise in a warm place for an hour or so.
8. Preheat the oven to 325F.
9. Bake the brioche buns for 25-30min.
10. Combine the milk, powdered sugar and vanilla in a small bowl to make the glaze. Drizzle on top of the brioche once they are cooled down.
