Yields approx. 2 dozen cookies

1 1/2 cups flour
1 tsp baking powder
pinch of salt
1/2 cup softened butter
1/2 cup granulated sugar
1/2 tsp vanilla extract
1 egg yolk
1 tsp orange extract
red and yellow food colouring

  1. In a medium bowl mix together the flour, baking powder, and salt and set aside.
  2. In an electric mixer cream the butter and sugar until light and fluffy. Add the vanilla and egg yolk into the butter mixture and mix on low to combine.
  3. Add in the dry ingredients and stir until it is a smooth dough. Divide the dough in half and knead in the orange extract and food colouring into one half.
  4. Roll one of the halves of dough into a rectangle about 1/8 of an inch thick. Repeat with the other half of the dough and place which ever colour you want in the center on top of the other sheet of dough.
  5. From the longer edge roll up the dough into a log shape, wrap tightly with saran wrap and place in the fridge for around an hour, until it is firm.
  6. Preheat the oven to 350F and cover two cookie sheets with parchment paper.
  7. Slice the dough log into 1/4 inch thick slices and place on the cookie sheets, about 1 inch apart. Bake for 13 minutes, until the edges of the cookies are just slightly browned.
  8. Let cool slightly and then transfer cookies to a cooling rack.
