This muffin recipe will give you a bit of a cafe comfort treat at home! My favourite way to have a muffin is alongside a hot tea latte!

Yields 12

3 bananas
1/4 cup melted butter
1/4 cup milk
1 egg
1 tsp vanilla extract
2/3 cup sugar
2 cups flour
1/2 tsp salt
1 tsp baking soda
2/3 cup walnut pieces
1/2 cup blueberries (tossed in flour)

  1. Preheat oven to 350F and line a muffin pan with 12 paper liners.
  2. Mash bananas in a mixing bowl and then add in the melted butter and milk.
  3. Mix in the egg, vanilla, and sugar until well combined.
  4. Add in the dry ingredients and stir to combine, being careful to not over mix.
  5. Fold in the walnuts and blueberries and divide the batter into the muffin pan.
  6. Top with chopped walnuts if desired.
  7. Bake for 18-20 minutes, until the muffins are springy to the touch.
  8. Let cool on a wire rack before serving or storing!
