A nicely sweet and creamy mousse combined with a delicious berry coulis, just the best way to finish a meal!
Yields 6 small jars
Mousse
2 cups heavy cream
1 1/2 cups white chocolate chips
1 tsp vanilla extract
Berry coulis
2 cups frozen berries
1/4 cup sugar
2 tsp lemon juice
1 tsp cornstarch
- Heat 1 cup of the heavy cream in a saucepan on low heat until small bubbles appear.
- Incorporate the white chocolate chips and mix with a whisk until the chocolate has melted.
- Add the cream and vanilla and mix well.
- Let cool down at room temperature for 20 minutes. Cover your bowl and refrigerate for 8 hours or overnight.
- Once the mousse cooling time is over, it's time to make the berry coulis.
- Place the berries, lemon juice and sugar in a saucepan and cook on medium heat. Mash the fruits completely.
- Once it simmers, add the cornstarch and mix well. Cook for an extra 5 minutes and take off heat.
- Pass through a sieve and discard the seeds. Let cool down in a small bowl. Set aside.
- Take the mousse out of the fridge and beat with an electric mixer until light and fluffy. It will take just 1-2 minutes, be careful to not overwhip it.
- Place the coulis at the bottom of the 6 small jars. Place your mousse in a piping bag with a star tip and pipe the mousse on top of the coulis.
