White chocolate and vanilla complement the earl grey tea in these cookie bars perfectly! A hot tea latte and a tea infused treat like this is the best way to welcome the fall season.
Yields around 1 dozen bars
2 cups flour
1/2 tsp baking soda
1/4 tsp salt
2 tea bags earl grey
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup melted butter
2 egg whites
1/4 cup apple sauce
1 tsp vanilla extract
2/3 cup white chocolate chips
(plus 1/3 cup white chocolate chips for topping)
- Preheat oven to 350F and line or spray a 9x13 cake pan.
- In a large bowl combine the flour, baking soda, salt, and loose tea. (cut open tea bags and dump out contents)
- In the bowl of an electric mixer whisk together to sugars, butter, egg whites, apple sauce, and vanilla. Mix on high until lighter in colour.
- With the mixer on low slowly add in the dry ingredients until just combined.
- Fold in the chocolate chips and then press the dough into your cake pan, smoothing the top with a spatula.
- Bake for around 17 minutes until the edges are lightly browned and an inserted toothpick comes out clean. Remove from oven and let cool.
- In a microwave safe bowl melt the white chocoalte chips for the top of the bars. Microwave in short increments and stir frequently.
- When the bars are cool drizzle the melted chocolate on top and let set before slicing and serving.
