Summer is the best time for baking because of all the seasonal fruits including the berries! These bars are a hybrid between a chewy cookie and a dense cake with a blueberry sauce and crisp on top! Adding chocolate chips is optional but I personally like the pairing of blueberries and chocolate.


Yields 8-10 bars

Blueberry Sauce
4 cups blueberries
1 tbsp cornstarch
1 tsp lemon juice
Dough
2 cups flour
1 tsp baking powder
Pinch of salt
3/4 cup butter
1/2 cup sugar
1 tsp vanilla extract
2 eggs
1/2 cup chocolate chips (optional)
Crisp
1/3 cup brown sugar
1/4 cup flour
2 tbsp melted butter
1/4 cup oats
1/4 cup walnut

1. Combine the blueberries and lemon juice in a saucepan and cook on medium heat for 5 min. Add the cornstarch and mix well.
2. Cook for 10-15 more minutes until the texture gets thicker. Set aside and let cool down.
3. Preheat the oven at 350F.
4. Prepare a 7X11" baking dish with butter and flour. Set aside.
5. In a medium size bowl, combine the soften butter and sugar together and mix with a electric mixer.
6. Add the egg and the vanilla and combine well.
7. In a small bowl, combine the flour, baking powder and salt. Add to the butter mixture and mix well. The dough will be dry and it's normal.
8. Incorporate the chocolate chips. (Optional)
9. Press the dough at the bottom of your baking dish, spread the blueberry sauce on top of the dough.
10. Combine all the ingredients for the crisp and sprinkle on top of the blueberry sauce. Double the recipe of the crisp if you want more of it on top
11. Bake for 25 minutes.
