Don't let "muffins" in the title fool you into thinking they aren't a decadent chocolate experience! Packed with chocolate chips and paired with the flavour and moisture the banana brings, it's muffin perfection.


Yields 9 muffins

1/2 cup softened butter
1/2 cup borwn sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla
1 cup mashed banana (about 3 bananas)
1/4 cup mayo
1 tsp lemon juice
1 cup flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
2/3 cup chocolate chips

  1. Preheat oven to 350F and butter your muffin pan (I use a silicone pan which makes removal easy, if using a metal pan you can use paper liners).
  2. In the bowl of an electric mixer cream the butter and both sugars together on high speed. Lower the speed on your mixer and add in the egg and vanilla, mix until just combined.
  3. Mix in the banana, mayo, and lemon juice.
  4. In a separate bowl combine the flour, cocoa powder, baking soda, and salt.
  5. Add the dry ingredients into the mixer on low speed. When just incorporated fold in the chocolate chips.
  6. Divide the batter into 9 of the muffin wells, top with more chocolate chips if desired.
  7. Bake for approximately 22 minutes, when the muffins spring back to the touch they are done.
