I just love the taste of these muffins! It's nicely moist and sweet, just the perfect late afternoon snack!

Yields 12 muffins

1 1/2 cups flour
1 tsp baking powder
Pinch of salt
1/2 cup butter
1/3 cup sugar
2 eggs
1 tsp vanilla extract
3/4 cup soy milk
1/2 cup cranberry
1 cup diced apple

  1. Preheat the oven to 350F.
  2. Combine the flour, baking powder and salt. Set aside.
  3. Cream the butter with the sugar in another bowl. Incorporate the eggs and vanilla and mix well with an electric mixer.
  4. Incorporate the dry ingredients alternating with the milk and mix until well combined.
  5. Using a spatula, fold the cranberries and apple into the batter.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
