I just love the taste of these muffins! It's nicely moist and sweet, just the perfect late afternoon snack!
Yields 12 muffins
1 1/2 cups flour
1 tsp baking powder
Pinch of salt
1/2 cup butter
1/3 cup sugar
2 eggs
1 tsp vanilla extract
3/4 cup soy milk
1/2 cup cranberry
1 cup diced apple
- Preheat the oven to 350F.
- Combine the flour, baking powder and salt. Set aside.
- Cream the butter with the sugar in another bowl. Incorporate the eggs and vanilla and mix well with an electric mixer.
- Incorporate the dry ingredients alternating with the milk and mix until well combined.
- Using a spatula, fold the cranberries and apple into the batter.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
