Yields 4 dozen

1 1/2 cups softened butter
2 cups brown sugar (not packed)
1/4 cup white sugar
2 eggs
2 tsp vanilla extract
4 cups flour
4 tsp cornstarch
2 1/2 tsp baking soda
1 tsp salt
1 cup white chocolate chips
1 cup roughly chopped macadamia nuts

  1. Preheat oven to 325F.
  2. In the bowl of an electric mixer cream the butter and sugars on high speed until light and fluffy. Incorporate the eggs in one at a time, and then add the vanilla. Make sure to scrape the sides of the bowl well.
  3. Add the dry ingredients and mix on low to combine, scraping the sides of the bowl periodically.
  4. Mix in the chcocolate chips and nuts.
  5. Scoop the cookie dough out onto parchment lined sheet pans, leaving about 2 inches in between each cookie.
  6. Bake for around 12 minutes, longer if you want a more crisp cookie!
