Yields 4 dozen
1 1/2 cups softened butter
2 cups brown sugar (not packed)
1/4 cup white sugar
2 eggs
2 tsp vanilla extract
4 cups flour
4 tsp cornstarch
2 1/2 tsp baking soda
1 tsp salt
1 cup white chocolate chips
1 cup roughly chopped macadamia nuts
- Preheat oven to 325F.
- In the bowl of an electric mixer cream the butter and sugars on high speed until light and fluffy. Incorporate the eggs in one at a time, and then add the vanilla. Make sure to scrape the sides of the bowl well.
- Add the dry ingredients and mix on low to combine, scraping the sides of the bowl periodically.
- Mix in the chcocolate chips and nuts.
- Scoop the cookie dough out onto parchment lined sheet pans, leaving about 2 inches in between each cookie.
- Bake for around 12 minutes, longer if you want a more crisp cookie!
