One of my favourite summer drinks to get at Starbucks is the Tazo Passion Tea Lemonade, and since I love incorporating tea into baked goods I decided to come up with this recipe for a copycat biscotti!
Yields ~8 biscotti
2 tbsp ground flaxseed
3 tbsp lemon juice
3 tbsp water
1 cup flour
1/2 tsp baking powder
pinch of salt
1/2 cup sugar
2 Tazo Passion tea bags (cut open)
1/4 cup canola oil
2 tsp lemon zest
- Preheat oven to 325F.
- In a small bowl combine the ground flax, lemon juice, and water and set aside for a few minutes.
- In a medium bowl combine the dry ingredients, including the sugar. In a separate larger bowl mix together the flax mixture, oil, and zest.
- Mix the dry ingredients into the wet ingredients with a spatula or wooden spoon, careful not to over mix. Sprinkle in the loose passion tea and gently fold into the dough.
- Place the dough on a parchment lined baking sheet and with wet hands mold into a flattened log shape.
- Bake for around 30 minutes until it is slightly firm and light golden. Remove from oven and let cool, then transfer to a cutting board.
- Using a serrated bread knife slice the log into 3/4" or 1" slices.
- Place the sliced biscotti back onto the baking sheet and bake for around 15 minutes. (adjust the baking time depending on how crisp you want them!)
- Once out of the oven put the biscotti on a rack to cool.
- In a bowl stir together the icing sugar and steeped tea for the glaze. Add food colouring if desired.
- Once the biscotti is cooled, drizzle with glaze and serve!
