Yields 8 donuts

1 tbsp ground flaxseed
3 tbsp water
1 1/2 cups flour
1 tsp baking soda
pinch of salt
1/2 cup sugar
3 tbsp melted vegan butter
1 tsp vanilla extract
1/4 cup milk alternative
2 tbsp lemon juice
2 tbsp lime juice
Glaze:
2 tbsp lime juice
2 tbsp lemon juice
2 cups powdered sugar

  1. Preheat oven to 350F.
  2. Lightly grease donut pans and set aside.
  3. In a small bowl combine the flax and water and let gel for at least 5 minutes.
  4. Sift dry ingredients into a bowl and set aside.
  5. In a medium mixing bowl stir together the sugar, melted butter, vanilla, “milk”, lemon juice, and lime juice.
  6. Add the dry ingredients in to the wet and mix until just combined.
  7. Pipe the batter into the donut pans and bake for 10-11 minutes, until springy to the touch.
  8. Let the donuts cool for a couple minutes and then remove from pan and place on a wire rack over a sheet pan.
  9. Mix together the ingredients for the glaze and dip the tops of the donuts in the glaze. Place them back on the wire rack and let the glaze drip off.

    Optionally after dipping the donuts in the glaze you can colour it lime green with food colouring and pipe or drizzle a design on top.
