These cream puffs have everything we want in a great dessert; crisp choux buns, caramelized pears and nicely sweet maple whipped cream!
The mille-feuille is a french dessert traditionally made of puff pastry and pastry cream but for my recipe, I decided to use whipped chocolate ganache and strawberries which is perfect for valentine's day. The strawberry puree makes the mille-feuille a little messy but it's really delicious!
Decadent and elegant, but not as hard to make as you'd think!

This recipe is now one of my favorite as it's not too sweet, creamy and crispy at the same time and quite easy to make! Earl grey pastry cream is so delicious and I can't wait to use it again in other recipes!
I wasn't too sure of the pairing of lime and blackberry at first but it ended up being delicious scones!
