Using floral flavourings is often intimidating and its sometimes easy to go overboard! Infusing the cream with lavender flowers was the perfect way to impart a unique but not over the top flavour to these ganache tarts.

I thought it would be quite a challenge to work with lavender because I was afraid it would be too strong as a flavour but I was so wrong! The lavender simple sirup gives a nice flavour to the icing and it beautifully complements a moist almond flavoured cupcake!

Strawberry and basil is slowly becoming a classic pairing these days and I thought it would make very flavourful cupcakes! I was really curious to see how it would turn out as I never used fresh herbs for baking before. Really surprising and delicious results!
