Turning this popular drink into a cupcake was much harder than I expected! I tried many different cupcake recipe that were all good on their own but would not match well with the marshmallow icing. Then, I thought that maybe I should add chocolate ganache inside and I was right!
At first, I was working on making chewy and thin coffee and chocolate cookies and the results were not at all what I expected! But since the cookies were so good anyway, I decided to change my original plan and call my recipe mocha soft cookies!
These delicious and classic little cookies are adapted from my moms (and in my opinion the best!) chocolate chip cookie recipe. I made minimal changes in order to make these cookies vegan, and decided to take them up a notch by putting vegan caramels inside before baking!
