Ever since we started the blog, I always wanted to experiment with savory baking recipes but I didn't know where to start! Cheese scones are one of my favorite snacks to have in a coffee shop so it made sense to create my own recipe!
Yields 6-8 scones
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tbsp sugar
Pinch of salt
Pinch of cayenne pepper or chili powder (optional)
1/2 cup cold butter
1/2 cup soy milk + 1 tsp vinegar
1/3 cup minced chives
1 cup shredded cheese
2/3 cup minced sun-dried tomatoes
- Preheat the oven to 425F.
- Combine the flour, baking powder, baking soda, sugar, salt, cayenne pepper(optional) in a big bowl.
- Incorporate the butter by pressing with your fingers until it looks like sand.
- Incorporate the cheese and chives and mix with a spatula.
- Incorporate the milk mixture and mix with your hands until it forms a dough.
- Add the sun-dried tomatoes and gently mix.
- Knead the dough slightly and press into a rectangle 1 1/2" thick.
- Cut into triangles or any shape you like and place on a baking sheet 1/2" apart.
- Bake for 12-15 minutes or until a toothpick inserted in the middle comes out clean. The scones have to be golden brown and not heavy when lifted.
- Let cool down on a wire rack and serve!
