Popsicles are my ultimate favorite frozen treat when it's summer time! It's the most refreshing thing to have in the middle of a heat wave and it's the easiest thing to make at home!
Yields 6 popsicles
1 cup strawberries
1 cup pineapple chunks
2/3 cup vanilla skyr yogurt (or greek yogurt)
1/4 cup water
1 tsp lemon juice
1 tbsp maple syrup
- Combine the strawberries, 1/3 cup of skyr, 1 tsp or lemon juice and 1/8 cup of water in a blender. Blend at high speed until you obtain a smoothie texture.
- Pour half of the strawberry mixture equally into 6 popsicle molds. Place in the freezer for 1-2 hours.
- Combine the pineapple chunks, 1/3 cup of skyr, 1/8 cup of water and the maple syrup in a blender. Blend at high speed until you obtain a smoothie texture.
- Take the popsicle molds out of the freezer and pour all the pineapple mixture equally between the popsicle molds. Place in the freezer for 1-2 hours.
- After 30-45 min in the freezer, add the popsicle sticks.
- Pour the rest of the strawberry mixture equally into the popsicle molds and place in the freezer.
Keep your mixtures in the fridge while you wait for the different layers to freeze
