A perfect gift giving cookie that brings all the nostalgic feels! With endless possibilities of jams and jellies you can use, feel free to switch it up with your favourite flavour!


Yields 2 dozen

1 cup room temp butter
1/3 cup granulated sugar
1/3 cup lightly packed brown sugar
1 egg
1 tsp vanilla extract
2 1/4 cups flour
1 tbsp cornstarch
1/2 tsp salt
1/3 cup raspberry jam
optional: sugar for rolling

  1. Cream butter and sugar in the bowl of an electric mixer on high speed until it is light and creamy fluffy.
  2. Add in the egg and vanilla with the mixer on low, scrape the sides of the bowl to make sure everything is incorporated.
  3. In a separate mixing bowl combine the flour, cornstarch, and salt.
  4. With the mixer still on low slowly add in the dry ingredients and mix until combined, periodically scraping the sides of the bowl.
  5. With a 1 tbsp cookie scoop, scoop out the cookie dough and firmly roll into balls. Roll the dough ball around in a small bowl of sugar if desired and place on a parchment lined baking sheet.
  6. With the back of a small spoon (I used a rounded 1/4 tsp measuring spoon) press an indent into all of the cookie balls.
  7. Place cookies in the freezer for 30 minutes to firm up.
  8. Preheat oven to 375F and microwave the jam for 5-10 seconds just until it is stirable.
  9. Fill each cookie with the jam, right to the top of the indent, and then place in the oven for 11-13 minutes. Remove from oven when the cookies are just starting to brown on the sides.
  10. Let cool completely before serving!
