I used jumbo dark chocolate chips in these cookies to really take them to the next level. Combined with oats and peanut butter, you can't go wrong!
Yields 16 cookies
1/2 cup room tempurature butter
1/3 cup brown sugar
1/3 cup granulated sugar
9 tbsp peanut butter
1 egg
1 tsp vanilla extract
3/4 cup flour
1 tsp baking soda
pinch of salt
1 1/2 cups oats
1 cup chocolate chips
- Preheat oven to 350F and line two cookies sheets with parchment paper.
- In an electric mixer cream the butter, sugars, and peanut butter until light and fluffy. Add in the egg and vanilla and mix to combine.
- With the mixer on low add in the flour, baking soda, and salt. Mix until it just comes together. Gently mix in the oats and chocolate chips.
- Using a 3 tbsp scoop, scoop out the cookie dough onto the prepared sheet pans. Press down the dough to flatten slightly. Bake for 10-12 minutes.
- Remove from oven and let sit for a minute or two before transferring to a wire rack to cool.
