I used jumbo dark chocolate chips in these cookies to really take them to the next level. Combined with oats and peanut butter, you can't go wrong!


Yields 16 cookies

1/2 cup room tempurature butter
1/3 cup brown sugar
1/3 cup granulated sugar
9 tbsp peanut butter
1 egg
1 tsp vanilla extract
3/4 cup flour
1 tsp baking soda
pinch of salt
1 1/2 cups oats
1 cup chocolate chips

  1. Preheat oven to 350F and line two cookies sheets with parchment paper.
  2. In an electric mixer cream the butter, sugars, and peanut butter until light and fluffy. Add in the egg and vanilla and mix to combine.
  3. With the mixer on low add in the flour, baking soda, and salt. Mix until it just comes together. Gently mix in the oats and chocolate chips.
  4. Using a 3 tbsp scoop, scoop out the cookie dough onto the prepared sheet pans. Press down the dough to flatten slightly. Bake for 10-12 minutes.
  5. Remove from oven and let sit for a minute or two before transferring to a wire rack to cool.
