This quick and easy key lime pie recipe is super refreshing and a must-have during the summer!
Yields 1 pie
Crust
1 1/2 cups graham cookie powder
1/3 cup melted unsalted butter
Filling
3/4 cup lime juice
2 tbsp cornstarch
1 can sweetened condensed milk
Zest of 2 limes
1/4 cup soy milk
3 eggs
Decoration
1 1/2 cup of whipped cream (optional)
1 lime
- Preheat the oven to 350F.
- Combine the graham cookie powder with the melted butter in a small bowl.
- Press down the mixture in a 9" pie pan. Make sure to cover the sides completely.
- Bake in the oven for 12-15 minutes. Set aside to cool.
- In a saucepan, combine the lime juice and cornstarch and mix well.
- Incorporate the rest of the ingredients in the saucepan and mix until well combined.
- Cook on medium heat until it boils while mixing constantly. Cook until the texture has thicken and pour into the crust.
- Cover with plastic wrap and place in the fridge for 2-3 hours.
- Decorate with whipped cream or slices of limes as you wish!
