I always like trying new cake designs and with Halloween coming up, it felt like the perfect timing! My Frankenstein ended up looking like it was fresh out of college which is not exactly what I intended for initially. Feel free to be creative with this cake and change the hair and facial expression as you wish!


Yields 3 layers, 6" cake

Cake
3 cups flour
Pinch of salt
1 tsp baking powder
1 tsp baking soda
1 cup butter
1/2 cup sugar
2 eggs + 1 egg white
1 tsp vanilla extract
1 1/4 cups soy milk + 1 tsp vinegar

1. Preheat the oven to 350F and lightly coat 3 6" cake pan with butter and flour.
2. In a small bowl, combine the flour, salt, baking powder and baking soda. Set aside.
3. In another bowl, cream the butter with the sugar. Incorporate the eggs one at a time and mix well with an electric mixer. Add the vanilla and mix.
4. Incorporate the dry ingredients gradually into the egg mixture, alternating with the milk and vinegar mixture.
5. Pour the batter equally in the 3 prepared cake pans. Bake for 25-30 minutes until a toothpick  inserted in the middle comes out clean.

Vanilla icing
1/2 cup unsalted butter
1 1/2 cup powdered sugar
1 tbsp soy milk
1 tsp vanilla
Chocolate icing
1/2 cup butter
2 cup powdered sugar
2 tbsp soy milk
2 tbsp cocoa
Decorations
Green, black and brown food colouring
1 chocolate bar
2 chocolate chips

  1. To make the vanilla icing, cream the butter. Incorporate 1 cup of icing sugar. Add the milk and vanilla. Add the rest of the icing sugar and mix well. Set aside.
  2. To make the chocolate icing, cream the butter and then add all the other ingredients. Mix with an electric mixer. Add brown food colouring.
  3. Spread a thin layer of white vanilla icing on a parchemin paper, big enough to cut out the eyes. Place two chocolate chips one inch appart in the centre. Place in the freezer for 15min.
  4. Take out of the freezer and cut out two eyes with a round cookie cutter. You can also use 2 halves of oreo cookies
  5. Colour the vanilla icing with green food colouring. Assemble your cake by spreading green icing in between each layers of cake and cover one side of your cake to create the face.
  6. Place a small amount of green icing in a piping bag with a big round tip and pipe the nose in the middle of the face. You can use a big green bubble gum instead.
  7. Place the eyes above the nose.
  8. Make a small amount of black icing, place in a piping bag with a tiny round tip. Draw the mouth and a scar on one cheek.
  9. Place the chocolate icing in a piping bag with a star tip and pipe the hair on the top and back of your cake. Feel free to use a different tip and create your own hairstyle.
  10. Cut 1 inch off both edges of the chocolate bar to create the bolts and place on each side of neck.
