Madeleines are such cute little cookies, and earl grey is the perfect flavor for them! They are so moist and delicious that we ate them all in less than 48h!


Yields 12-15 madeleines

Madeleine batter
1/2 cup melted butter
1 1/3 cup flour
Pinch of salt
2 tbsp earl grey tea
1/2 tsp baking powder
4 eggs
1/3 cup sugar
1 tsp vanilla extract
Glaze (optional)
2 tbsp soy milk
1 cup powdered sugar
1/2 tsp vanilla extract

  1. In a small bowl, combine the flour, salt, tea and baking powder. Set aside.
  2. In a big bowl, combine the eggs and sugar and mix with an electric mixer at high speed for 5-8 minutes until the eggs are light and fluffy.
  3. Add the vanilla to the egg mixture and mix gently with a spatula.
  4. Fold the dry ingredients into the egg mixture, small amounts at a time with a spatula.  Be careful to not overmix.
  5. Add 1/2 of the batter in the melted butter and gently mix with a spatula. Incorporate this mixture to the other half of the batter. Fold the with a spatula.
  6. Cover the bowl with plastic wrap and place in the fridge for 2 hours.
  7. Preheat the oven to 375F. Coat the madeleine mold with butter and scoop 2 tbsp of batter into the center of each scalloped well.
  8. Bake for 12-15 minutes or until a toothpick inserted in the centre comes out clean.
  9. Combine all the ingredients for the glaze and dip each previously cooled down madeleine in it. Madeleines are better if eaten within 24-48hrs.
