This muffin recipe will give you a bit of a cafe comfort treat at home! My favourite way to have a muffin is alongside a hot tea latte!
Yields 12
3 bananas
1/4 cup melted butter
1/4 cup milk
1 egg
1 tsp vanilla extract
2/3 cup sugar
2 cups flour
1/2 tsp salt
1 tsp baking soda
2/3 cup walnut pieces
1/2 cup blueberries (tossed in flour)
- Preheat oven to 350F and line a muffin pan with 12 paper liners.
- Mash bananas in a mixing bowl and then add in the melted butter and milk.
- Mix in the egg, vanilla, and sugar until well combined.
- Add in the dry ingredients and stir to combine, being careful to not over mix.
- Fold in the walnuts and blueberries and divide the batter into the muffin pan.
- Top with chopped walnuts if desired.
- Bake for 18-20 minutes, until the muffins are springy to the touch.
- Let cool on a wire rack before serving or storing!
