Pie season is finally here! This recipe is perfect for all beginner bakers that want to try making a pie and are scared to fail. It is very easy to make, tastes delicious and looks cute!


Yields 3 mini pies

Crust
1/2 cup cold butter
1 1/2 cup flour
Pinch of salt
1/3 cup cold water
1 tsp vanilla extract
Filling
1 cup blueberries
1 cup peach slices
1/3 cup sugar
1 tbsp lemon juice
1 tsp cornstarch

1. To make the crust, combine the flour and salt in a big bowl.
2. Cut in the butter with a fork or your fingers until the mixture resemble a coarse meal.
3. Add the water and vanilla and mix with a wooden spoon or your hands.
4. Form a ball with the dough and cover with plastic wrap. Place in the fridge for a few hours.
5. To prepare the filling, place all the ingredients in another big bowl and mix well.
6. Preheat the oven to 375F.
To assemble, take the dough out of the fridge and divide it in 3. On a lightly floured board, roll each part of the dough out to a thickness of 1/8 inch.
7. Spoon the fruit mixture onto the center of the dough leaving a 1-inch border. Fold the edges of the dough over the fruit, pleating the dough.
8. Bake for 30-40min.
