This recipe is a take on twix bars, with the filling less caramel like, and filled with almond goodness instead!


Yields ~1 dozen bars

Crust:
1 1/4 cups flour
1/4 cup sugar
1/2 tsp vanilla
2/3 cup butter
Filling:
2/3 cup almond butter
1/3 cup corn syrup
1/4 cup coconut oil
1/4 tsp salt
1 tsp vanilla
Topping:
1 1/4 cup chocolate chips
2 tsp coconut oil

  1. Preheat oven to 350F and line an 8x8” cake pan with parchment paper. Leave two edges long and hanging over the edge of the pan for easy removal. Set aside.
  2. In the bowl of an electric mixer combine the dry ingredients for the crust.
  3. Then add in the butter, in cubes, and the vanilla. Mix on low until the mixture comes together and forms a ball of dough.
  4. Press the dough into the prepared cake pan, making sure the top is smooth and level. Place in oven and bake for around 20 minutes. Set aside to cool when it is done.
  5. Prepare the filling by combining all of the filling ingredients in a medium sauce pot, except for the vanilla. Bring mixture to a simmer over medium low heat stirring often. Once it is bubbling let cook while stirring for 2-4 minutes.
  6. Remove from heat and stir in the vanilla. Pour over the crust and then place in the fridge to cool.
  7. For the chocolate topping place both the chocolate and the coconut oil in a heat proof bowl over a small pot of simmering water. Let melt and stir together, and then pour over the chilled twix bars.
  8. Let the chocolate set completely in the fridge before cutting into bars.
