Strawberry Lemonade bars
I love desserts made with fruits because it's always so tasty and delicious. These bars are simply the best snack!
Yields 9 bars
Crust
1/4 cup butter
1/2 cup flour
1 tsp vanilla extract
1 tbsp sugar
Filling
3 eggs
1/2 cup sugar
juice and zest of 1 lemon
3/4 cup flour
1 cup of sliced strawberries
- Preheat oven to 350°F.
- For the crust, combine the ingredients in a bowl and mix well using your hands.
- Press the dough into a 6'' baking dish.
- Bake for 12 minutes and then let cool down.
- In a bowl, combine the eggs, sugar, lemon zest and juice and flour with an electric mixer.
- Coat the strawberries with 1tbsp of flour in a small bowl. Incorporate the coated strawberries to your filling mix by folding with a spatula.
- Pour the filling on the crust and bake for 30 minutes. Be careful to not overcook.
