Orange Swirl Icebox Cookies
Yields approx. 2 dozen cookies
1 1/2 cups flour
1 tsp baking powder
pinch of salt
1/2 cup softened butter
1/2 cup granulated sugar
1/2 tsp vanilla extract
1 egg yolk
1 tsp orange extract
red and yellow food colouring
- In a medium bowl mix together the flour, baking powder, and salt and set aside.
- In an electric mixer cream the butter and sugar until light and fluffy. Add the vanilla and egg yolk into the butter mixture and mix on low to combine.
- Add in the dry ingredients and stir until it is a smooth dough. Divide the dough in half and knead in the orange extract and food colouring into one half.
- Roll one of the halves of dough into a rectangle about 1/8 of an inch thick. Repeat with the other half of the dough and place which ever colour you want in the center on top of the other sheet of dough.
- From the longer edge roll up the dough into a log shape, wrap tightly with saran wrap and place in the fridge for around an hour, until it is firm.
- Preheat the oven to 350F and cover two cookie sheets with parchment paper.
- Slice the dough log into 1/4 inch thick slices and place on the cookie sheets, about 1 inch apart. Bake for 13 minutes, until the edges of the cookies are just slightly browned.
- Let cool slightly and then transfer cookies to a cooling rack.
