Cranberry Orange Loaf
The pairing of orange and cranberry is perfect to make a loaf! It's so delicious that we ate it all in 2 days! It's a must-try during spring break!
Yields 1 loaf
1 1/2 cups flour
Pinch of salt
1 tsp baking powder
The zest of 1 orange
1/2 cup butter
1/2 cup sugar
3 eggs
1/2 cup orange juice
1/2 cup soy milk
3/4 cup fresh cranberries
- Preheat the oven to 350F
- Combine the flour, salt, baking powder and the orange zest in a small bowl. Set aside.
- In an another bowl, cream the butter and sugar together. Incorporate the eggs one at a time and mix until well combined.
- Combine the orange juice and milk in a measuring cup.
- Incorporate the dry ingredient gradually in the egg mixture alternating with the milk. Mix well.
- Coat the cranberries with a tablespoon of flour and incorporate to the batter. Mix with a wooden spoon.
- Pour the batter in a previously butter and flour coated loaf pan.
- Bake for 45-60 minutes or until a toothpick inserted in the middle comes out clean.
