Lime Blackberry Scones
I wasn't too sure of the pairing of lime and blackberry at first but it ended up being delicious scones!
Yields 12-14 scones
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 cup sugar
Pinch of salt
The zest of 2 limes
1/2 cup cold butter
1/2 cup lime juice
1/3 cup soy milk
3/4 cup fresh blackberries
1. Preheat the oven at 400F. In a big bowl, combine the flour, baking powder, baking soda, sugar, salt and lime zest.
2. Incorporate the butter by pressing with your fingers until it looks like sand.
3. Incorporate the lime juice and milk and mix with your hands until it forms a dough.
4. Coat the blackberries with 1-2 tbsp of flour and add to your dough. Mix gently.
5. Knead the scone dough slightly and press into a big circle 1 1/2” thick.
6. Cut into triangles (or really any shape you like) and place on a baking sheet 1/2” apart.
7. Bake for 15-20 minutes until the bottoms are nicely golden and when lifted the scones don’t feel heavy and wet.
8. Let cool down on a wire rack and serve!
