Key Lime Pie

This quick and easy key lime pie recipe is super refreshing and a must-have during the summer!


Yields 1 pie  

Crust
1 1/2 cups graham cookie powder
1/3 cup melted unsalted butter
Filling
3/4 cup lime juice
2 tbsp cornstarch
1 can sweetened condensed milk
Zest of 2 limes
1/4 cup soy milk
3 eggs
Decoration
1 1/2 cup of whipped cream (optional)
1 lime

  1. Preheat the oven to 350F.
  2. Combine the graham cookie powder with the melted butter in a small bowl.
  3. Press down the mixture in a 9" pie pan. Make sure to cover the sides completely.
  4. Bake in the oven for 12-15 minutes. Set aside to cool.
  5. In a saucepan, combine the lime juice and cornstarch and mix well.
  6. Incorporate the rest of the ingredients in the saucepan and mix until well combined.
  7. Cook on medium heat until it boils while mixing constantly. Cook until the texture has thicken and pour into the crust.
  8. Cover with plastic wrap and place in the fridge for 2-3 hours.
  9. Decorate with whipped cream or slices of limes as you wish!
