Grapefruit Donuts

Grapefruit is now one of my favorite flavour to use in my recipes! It creates the perfect balance between sweet and tart and these donuts are no exception!

Yields 12 donuts

Donut batter
1 1/2 cups flour
Pinch of salt
1 tsp baking powder
1 tsp baking soda
2 tbsp grapefruit zest
1/3 cup sugar
3 eggs
1/4 cup soy milk
1/4 cup grapefruit juice
Glaze
2 tbsp grapefruit juice
1 1/4 cups powdered sugar
A few of slices of grapefruit for decoration

  1. Preheat the oven to 350F.
  2. In a small bol, combine flour, baking powder, baking soda, grapefruit zest and salt.
  3. In a medium size bol, cream the butter and sugar together. Incorporate the eggs one at a time. Mix with an electric mixer until well combined.
  4. Combine the soy milk and grapefruit juice in a small cup. Incorporate the dry ingredients gradually alternating with soy milk mixture and mix well.
  5. Using a piping bag, pipe the batter into the donut pans so they are 2/3-3/4 full. Bake for 10-12 minutes, until they are springy to the touch. Let cool down.
  6. Combine all the ingredients for the glaze and mix with a fork.
  7. Dip each cooled down donut in the glaze. And decorate with small slices of grapefruit.
