Gingerbread Holly Wreath Bundt Cake
The bundt cake is made to be decorated as a holly wreath! This cake is very easy to make and decorate and will surely please everyone!
Yields 1 bundt cake
Cake batter
1 3/4 cups flour
1 tsp baking powder
1 tsp baking soda
Pinch of salt
1 tsp ginger powder
1 tsp nutmeg
1/2 tsp cardamom
1/2 cup butter
1/3 cup sugar
3 eggs
1/3 cup molasses
3/4 cup soy milk + 1 tsp vinegar
Vanilla buttercream
1/2 cup unsalted butter
1 1/2 cup powdered sugar
1 tbsp soy milk
1 tsp vanilla
Red and green fondant
Green food colouring
Gold and silver sugar pearl
1. Preheat the oven to 350F.
2. In a small bowl, combine the flour, baking soda, baking powder, salt and spices. Set aside.
3. In a big bowl, beat the butter and sugar with an electric mixer at high speed. Add the eggs one at a time and mix well.
4. Incorporate the molasses and mix well.
5. Incorporate the dry ingredients alternating with the mix of soy milk and vinegar and combine well.
6. Coat a bundt cake pan with butter and flour and pour the batter in the pan.
7. Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Take the cake out of the oven and let cool down on a wire rack.
8. To make the buttercream, combine the butter and 1 cup of sugar and mix with an electric mixer.
9. Incorporate the soy milk and vanilla and mix well.
10. Add the remaining 1/2 cup of sugar and mixed until well combined. (if the icing is too dry, add 1 tsp of soy milk)
11. Add the green food colouring to the icing and mix well.
12. Place the icing in a piping bag with a medium size star tip. Pipe open stars and small rosettes over the surface of the cake.
13. Make a bow with red fondant and boughs of holly with red and green fondant. (Or any other things to decorate your cake)
14. Place the decoration on your cake and serve!
