Easter Basket Cupcakes
I love baking when there is a holiday coming up! It's always so fun to try different cupcake or cake designs even if it's not always a success! The Easter basket cupcakes are very easy to make and you'll get a very cute result!
Yields 12 cupcakes
12 cupcakes (flavour of your choice)
3 cups of buttercream (flavour of your choice)
Yellow food coloring
Yellow, pink and orange starburst candies
2 piping bags
Small star tip
Big star tip
Small basket weave tip
36 mini eggs
1. To create the basket handles, heat a starburst candy in the microwave for 8-10 seconds. Roll it to create a long cylinder shape. Repeat this step with another candy.
2. Place the two cylinders next to each other and twirl it. Place in the shape of a half circle to create the handle. Repeat step 1 and 2, 12 times
3. Place all the basket handles in the freezer.
4. Place 1 cup of buttercream in a small bowl and set aside.
5. Color the rest of the buttercream with yellow food coloring.
6. Prepare one piping bag with the basket weave tip and the other one with the big star tip.
7. Place the white buttercream in the piping bag with the big star tip.
8. Place the yellow buttercream in the piping bag with the basketweave tip.
9. Create your basket weave pattern by piping small horizontal stripes (roughly 2 inches long) around the cupcake starting from the bottom and work your way up. Create 4 layers of stripes on the sides of your cupcakes. (See pictures)
10. Change your basket weave tip with a small star tip and create a shell border on the edge of your cupcake.
11. With the white buttercream, pipe a swirl in the middle of the cupcake.
12. Place 3 mini eggs on the swirl. Place 1 basket handle on each cupcake.
