Cranberry "Bliss" Bars
This recipe is an adaptation of Starbucks popular cranberry bliss bars! These bars are a lot lower in sugar and fat than the store bought version, and so much less expensive to make!
Yields 2 dozen
2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
2/3 cup granulated sugar
2/3 cup not packed brown sugar
1/4 cup softened butter
2 egg whites
1/4 cup unsweetened apple sauce
2 tsp vanilla extract
2/3 cup white chocolate chips
1/3 cup chopped dried cranberries
Topping:
8 oz low fat cream cheese
1/2 cup icing sugar
1/2 tsp vanilla extract
1/3 cup melted white chocolate chips
1/3 cup chopped dried cranberries
- Preheat oven to 350F and line a 9x13 cake pan with parchment paper, leaving two edges of parchment hanging out to use to lift them out later on.
- In a large bowl combine the flour, baking soda, salt, and cinnamon and set aside.
- In the bowl of an electric mixer cream the sugars with the butter, egg whites, apple sauce, and vanilla until it is lighter in colour and fluffy.
- Add the dry ingredients into the bowl with the mixer on low until everything is well combined.
- Add in the chocolate chips and cranberries and then transfer the dough into the prepared cake pan and press down flat with a spatula.
- Place in oven and bake for around 15 minutes until an inserted toothpick comes out clean. Once out of the oven let cool completely and then lift it out onto a wire rack.
- While its cooling make the icing by combining the cream cheese, icing sugar, and vanilla in an electric mixer and beat for 2 minutes.
- Spread the icing on the cooled bars and then drizzle with melted chocolate and sprinkle the dried cranberries on top.
- Place in the fridge, and once set slice the bars 3 cuts by 2 cuts and then slice each rectangle in half to make triangles.
