Cherry Muffins

After all the desserts that I had over the holidays, I wanted to bake something not too sweet! These muffins are light, fluffy and just sweet enough, the perfect snack to have paired with a cup of tea!


Yields 12 muffins

3 eggs
1/3 cup sugar
3/4 cup greek yogurt (vanilla or plain)
1/2 cup canola oil
1 tsp vanilla extract
Pinch of salt
1 3/4 cup flour
2 tsp baking powder
1/2 cup of soy milk
1 cup chunks of cherries

1. Preheat the oven to 375F.
2. In a big bowl, combine the eggs and sugar. Mix with an electric mixer for 3-4 minutes.
3. Incorporate the greek yogurt, canola oil and vanilla extract and mix until well combined.
4. In a small bowl, combine the flour, baking powder and salt.
5. Incorporate the dry ingredients into the egg mixture alternating with the milk. Mix until well combined.
6. Coat the cherries with a tbsp of flour. Incorporate to the batter and mix with a spatula.
7. Divide the batter equally into 12 cupcake liners and bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.
