Banana Nutella Triffle

This layered dessert contains banana cake, nutella pastry cream, caramelized bananas, and whipped cream so it's a dream come true for all the nutella lover out there!  


Yields 6 medium size glasses

Nutella pastry cream
3 tbsp sugar
3 tbsp nutella
3 tbsp cornstarch
Pinch of salt
2 1/2 cups soy milk

1. Combine the cornstarch, sugar, nutella, salt and place in a saucepan.
2. Incorporate 1/4 cup of milk in the saucepan and mix well.
3. Incorporate the rest of the milk while whisking constantly and cook on medium heat for roughly 10 minutes. Let it simmer on low/medium heat for 5-10 minutes or until it's thick enough to coat the back of a wooden spoon. Remember to constantly stir.
4. Pour the pastry cream in a bowl and cover with plastic wrap. Keep in the fridge until completely cooled down.

Banana Cake
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/4 cup butter
1/4 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup banana puree
1/2 cup soy milk + 1 tsp of white vinegar

1. Preheat the oven to 350F.
2. Combine the flour, baking powder, baking soda and salt in a small bowl.
3. In another bowl, cream the butter with the sugar with an electric mixer at high speed.
4. Incorporate the eggs and vanilla and mix until well combined.
5. Add the banana puree and mix well.
6. Incorporate the dry ingredients alternating with the mixture of milk and vinegar in the wet ingredients. Mix with an electric mixer until well combined.
7. Coat a 7" cake pan with butter and flour. Pour the cake batter in the pan and bake for 40-45 minutes or until a toothpick inserted in the centre comes out clean.
8. Let cool down on a wire rack to cool down.

Caramelized Bananas
3 sliced bananas
3 tbsp maple sirup

1. Pour the maple sirup in a saucepan and heat up on medium heat.
2. Place the banana slices in the maple sirup and cook for 15-20 minutes on medium heat or until the banana slices are slightly golden and crispy.
3. Place on a plate and let cool down.

To assemble the triffle

2 cups of whipped cream
1 cup chocolate chips (optional)

1. Cut the cake in a small cubes and place the whipped cream in a pipping bag with a round tip.
2. Place some cake cubes at the bottom of the glass. Then create layers following this order, pastry cream, banana slices, chocolate chips(optional) and whipped cream. Finish with whipped cream and decorate with banana slices or chocolate chips, as you wish!
